I thought that the guy who taught you the sword moves was a Sheikah because of the symbol on the Howl Stone but I guess he doesn't really count because he is dead.

Just because he controls the howlstones (gossip stones) doesn't mean that he was a sheikah. The Hero of Time was a magic user, and of course he got stronger as time went by.
